Cookin it up with the Gordys

There’s a few up and coming cooks in the Gordon Gang. I’m looking forward to the day one of them tells me to get out of the kitchen cos they want to take over doing dinners :) don’t think that will happen any time soon though! Meantime, I could sit round all day eating the sweet treats they occasionally whip up! Despite Drew telling me he wants to move rural so he can make us pigeon pie (which I just can't wait to try), he makes a pretty mean Mandazi. These are East African doughnut like treats that are sold on the side of the road and taste soooo good warm...
Here’s the recipe (rated easy as - by us!) if you or your kids want to give them a go!
MANDAZI
4 cups flour
2/3 cup sugar
3 t baking powder
1 t cinnamon
¼ t salt
4 T margarine or butter
Water to mixOil to deep fry ) can keep and reuse!


Mix flour, baking powder, cinnamon, sugar and salt together

Cut in the margarine
Add enough water to make a dough. Knead lightly and let sit for about 30 mins
Roll out onto a floured board
Dough should be thin – about ¼ inch thick. Cut into thin strips, small squares or triangles
Deep fry a few at a time in a small pot of oil, on medium heat. Fry till brown in colour and crisp on outside.
Coat in sugar and cinnamon if wanted – we do occasionally but just as nice without. Keep in airtight container, but we think they're best just eaten in one sitting while warm!

Makes enough to feed a tribe plus a visiting tribe or two!
